Influence of Drying Methods on Drying Kinetic and Oil Extraction Yield of Grated Coconut

Abstract

Coconut (Cocos nucifera L.) requires effective drying methods to prevent spoilage due to its high moisture content. This study examines the impact of sun drying and oven drying at 40°C and 60°C on the drying kinetics, oil yield, and microstructure of grated coconut. The Page, Newton, and Henderson-Pabis models were applied to analyze drying behavior, while FTIR and SEM assessed chemical composition and structural changes. Oven drying at 60°C resulted in the fastest drying time and highest oil yield (47.33%), with the Page model providing the most accurate prediction of drying kinetics. However, higher temperatures led to significant microstructural damage. While these findings help optimize coconut drying by balancing efficiency and quality, the study is limited to specific drying conditions and does not account for energy consumption or sensory quality. Further research is needed to explore the effects of structural changes on product quality and energy-efficient drying methods. ensuring a balance between efficiency and product quality in industrial applications. © 2026 Author(s)
